RSweet Potato Casserole (serves 10)
4 cups sweet potatoes ( cooked; wrap in foil and bake in oven at 450 for one hour. Let cook, unwrap and peel skin off)
1 cup white sugar
2 eggs; beaten
½ cup milk
½ tsp salt
1/3 cup butter, melted
1 tsp. vanilla extract
Topping:
1 cup packed brown sugar
½ cup all purpose flour
1/3 cup butter, melted
1 cup chopped pecans
In mixing bowl, combine potatoes, sugar, eggs, milk, salt, 1/3 cup butter and vanilla. Mix together and pour into a greased 9x13 baking pan.
To prepare the topping, combine in a separate bowl the brown sugar, flour, 1/3 cup melted butter and pecans. Mix together and crumble over potato mixture. Bake uncovered at 350 for 35-45 minutes.
You can reduce the white sugar to ½ cup and use 1 stick of butter and add cinnamon and nutmeg to taste. |
