Lily's Puff Pastry
5LB Yukon Gold Potatoes
1/4C Minced Garlic
1PKG Frozen Puff Pastry, Thawed
1/2C Olive Oil
1/2C Butter
1C Milk
Salt
Pepper
Chopped green onions (optional)
Preheat oven to 350. Peel and boil potatoes until tender.
While they are boiling, roast garlic in olive oil, bake at
350 for 15-20 minutes, drain off most of the oil and whip
garlic and oil together.
When potatoes are done, drain and steam a little, then whip
in butter, milk, salt, pepper and roasted garlic to taste.
Add chopped green onions if desired to the mixture.
Roll out puff pastry into a 9x13 pan. Put puff pastry layer
on the bottom. Put potato mixture on top and add the next
puff pastry layer. Bake at 350 for 40 minutes.
